White Peony is a mildly fermented tea, which is a kind of white tea and a high quality category of white tea. It is made from one bud and two leaves of white tea, which are subjected to a specific withering and drying process. The shape of white peony is green leaves with silvery white hairs, and when brewed, it looks like green leaves holding a white flower. White Peony is a famous historical tea in Fujian Province, created in the 1920s in Shuijizhen, Jianyang City, Fujian Province, and now the main production areas are Zhenghe County, Songxi County and Jianyang City, Nanping City, Fujian Province. The taste of White Peony is sweet and mellow, full of millets and aromas, with a distinct fresh feeling when drinking, accompanied by a variety of aromas such as floral, grassy, and so on. The key point of the production process of white peony is withering, which needs to be changed flexibly according to the external environment. The withering process of white peony has long been free from the past stage of being at the mercy of God, adopting natural withering or compound withering indoors on sunny days in spring and autumn or in summer when the weather is not sultry, and adopting indoor withering with hot air withering tank when it is hot.

 

Premium white peony tea:

appearance: buds and leaves with branches, leaf edges dangling and curling, less broken, uniform gray-green, silvery-white and clean, no old stems, sweet and pure taste, with the hairs showing; soup color light apricot yellow, mellow and sweet, tender and uniform, yellow-green leaves, red-brown veins, soft and bright leaves.

 

First grade white peony tea:

appearance: buds and leaves with branches, uniform and tender, still uniform, leaf edge drooping and rolled, slightly broken open, silvery white hair center, hair center is obvious, leaf color gray green or dark green, part of the leaf back with velvet. Inner quality: fresh and pure aroma, with hairs; taste is still sweet and pure, with hairs; soup color is light yellow, brighter. Leaf base: the hairy heart is still visible, the leaves are soft, the veins are slightly red and still bright.

 

Second grade white peony tea:

appearance: part of the buds and leaves with branches, more broken sheets, with hairs, hairs slightly thin, leaves are still tender, dark green color, slightly with a small amount of yellow-green leaves and dark brown leaves. Inner quality: the aroma is still fresh and pure, with slight hairs; the taste is still fresh and pure, with slightly green and astringent sweetness; the soup color is dark yellow and bright.
