Our organic long jing is from the BIO certified tea plantation of our own, organic tea growing use no chemical or pesticide or the specialty to control the pest. Even though the out appearance of organic long jing is not good enough but the taste remain the most natural and refresh aroma and flavor, most important is that there is no any harmful residue in the leaves to cause the eternal disease for human bodies.

Usually, long in the first harvest, from late March to early April, gives more tender shoots, greater sweetness, less bitterness, and a fresh rich taste. When brewing, the tea gives a beautiful light yellow cup. Thanks to the tea is ecological, the taste can differ slightly, and give this tea a personal taste.

Dragon Well is comprised of tender buds and leaves harvested during the early spring Mingqian time, making for a rich, brothy and sweet infusion. The process of making Longjing tea is very strict; It usually employs iron pans for baking the tea, and it involves ten techniques based on different temperatures and moisture, including shaking, grasping, buckling, pressing, grinding, rubbing, and throwing.

This tea has a very distinctive shape: smooth and perfectly flattened along the inside vein of the leaf, the result of highly skilled shaping in a hot wok. This process, known as pan-firing or pan-frying, was perfected in China by tea masters over many centuries. It gives the tea an inviting, toasty aroma.

Like the other green teas, to brew long jing, we suggest to using 3 grams of leaf (round teaspoon) per 7-8 ounces of water.  Steep with water temperature of 185-195 degrees F.; steep for 2 to 2.5 minutes. Longer steep times will yield a stronger cup taste, more pungent flavor with some increase in the tea's astringency or "bite". Drain the leaves, leave them dry and save them for additional steeps.
